I finally worked out a good German Pancake recipe that doesn't use any white flour and still tastes pretty light. It doesn't fluff up huge in the oven like a white flour recipe will but that is okay with me. It is still a yummy and a more nutritious breakfast.
German Pancakes
Ingredients:
1 cup oatmeal flour (use about 1 1/4 cup of oatmeal)
1 cup almond milk (or other milk of your choice)
6 eggs
1 Tablespoon Cinnamon*
1 Teaspoon vanilla *
salt*
1 Tablespoon butter

Preheat oven to 400 degrees. Add butter to 9 x 13'' baking pan and put it in the oven while the oven warms to melt the butter. Pull out as soon as butter is melted.
Grind oatmeal into flour (using the dry blade).
Add milk, eggs, cinnamon, vanilla to flour and blend just until ingredients are mixed (about 5-10 seconds).
Pour batter into the pan with the melted butter and place in center of the oven. Bake for 18-20 minutes.
Berry Syrup
Ingredients:
1 1/2 cups of frozen berries (I used marion berries in the picture)
1/2 to 1 cup of plain yogurt
Sugar to taste (agave, honey, Xylitol, dates)
Blend for 2-4 minutes to get it warm
